PICKED IN THE LATE AFTERNOON ON THE 30TH OF MARCH. FRUIT WAS CHILLED OVERNIGHT BEFORE WHOLE BUNCH PRESSED TO TANK, COLD SETTLED OVERNIGHT AND RACKED CLEAN TO BARREL. ELEVAGE FOR 12 MONTHS IN FRENCH OAK WITH 30%. BOTH UNFINED AND UNFILLTERED.
